As Dan says, “From selecting the blocks for their excellent terroir, to deciding the exact day the fruit should be picked, are all critical decisions made by the winemaker. Once we have brought the finest parcels of fruit to the winery, then I can focus on harnessing its potential throughout the winemaking process.” The impeccable nature of our Coonawarra Cabernet Sauvignon is a testament of his insight with this particular variety. He adds “Cabernet Sauvignon is the king of red grapes. The key to crafting it lies in finding the perfect balance of fruit intensity and tannins. By doing this, the wine promises to last decades and its potential for great longevity is one of the many things that make it special.” Dan’s dedication to craft wines that bring honour to Hugo Gramp’s namesake has cemented his place as one of Australia’s top winemakers, amassing an enviable list of awards including Young Winemaker of the Year in 2011 and a coveted place in the 2015 Len Evans Tutorial – known as the most exclusive wine school in the world.
